I’m a noob coming from Wordpress and one of the reasons why Hugo seems very interesting to me are the variety of themes.
Question, is it possible to set templates on a per page/post basis?

Look at the layout/template doc, but you can set the layout variable in the page’s frontmatter to pick a specific template for a given page, yes. But I would recommend that you rather pick your templates per, say, section.
