This seems a bit weird that my posts in a series are ordered randomly.
What determines their order? I tried changing their date but that didn’t do it and I can’t find any documentation.

you may sort them manually or use the .By. . method of the collection.

Great, I hadn’t realised that a series of posts would be a “Page Collection”. Setting the appropriate weights in the front matter did the trick. Thanks!
Note there is also the concept of taxonomic weight, allowing you to control the weight of a page for each taxonomy. This is different than the page weight, used in the default sort order for page collections passed into the home page, section page, site.RegularPages, etc.
